Hong Kong, 6th November, 1925.

I have the honour to acknowledge the receipt

of Your Excellency's despatch of 17th September on the

subject of the system of meat inspection of this Colony. As there are no privately owned abattoirs in this Colony there

has hitherto been no necessity to put in writing any

regulations for the control of such abattoirs. All abattoirs

and lairages are Government property and are under the

constant supervision of Government Veterinary Surgeons and of fully qualified Inspectors, who examine all animals before and after slaughter. All animals are housed for at least 24 hours before slaughter in the Government lairages. All

unfit, unwholesome or diseased carcasses are condemned and

cremated. All meat passed as fit is stamped before being

taken to the markets or lard factories. All lard factories

are close to the slaughter-houses and are inspected daily, and all meat products are packed, wired and sealed under the direct supervision of qualified European Inspectors.
